Kartoflanka – potato soup

This is a hearty soup that is good for cold winter days.

You need:
8-10 medium-size potatoes
2 chicken drumsticks or 300 g pork ribs
1 big onion
4 big clove of garlic
4 carrots
½  celeriac
1 parsley root
100 grams  fatback ( If You don`t have it, You can use a bacon)
2 bay leaves, 4 allspices
2 tablespoon soy sauce
2 tablespoon white flour
1 teaspoon dried parsley leaves
1 teaspoon dried lovage leaves
1 pinch ground cumin
Salt, black pepper – to tasty

Wash meat, pour about two liters of cold water, boil it. Cut roughly two carrots, garlic, onion, parsley and celeriac . Slice remaining two carrots . Peel potatoes, cut them into cubes, pour cold water. Cut fatback  into small cubes.
When the water with drumsticks begins to boil , add the bay leaves, allspices and vegetables (except potatoes and carrots cuted into slices), add soy sauce and boil it all together for about 30 minutes.

Meantime, throw the fatback to pan and fry to rise up the golden greaves. Pour off the excess fat, leaving about 2 tablespoons. Make a roux: add 2 tablespoons of flour, stir it constantly , and then take off the gas and add about 1/3 glass of water, mix to combine. Set it aside.

After 30 minutes add potatoes (without water ;)) and the remaining carrots to the soup. Boil it about 25 minutes, until tender. After this time, add the roux, add salt and pepper – the soup must be spicy. Add also dried lodvage and parsley, and optionally garlic powder. You can also peel meat from drumsticks and add into soup. Serve “ kartoflanka” with bread or solo, You can sprinkle it with fresh parsley leaves. The soup is definitely better served the day after cooking, after re-heating.
