Fuczki, or sauerkraut pancakes

This traditional Lemkos dish is often served in Bieszczady Mountain`s inns . Recently, I tasted them for the first time and they taste so good, that I decided to prepare them at home. I saw that in other recipes the Fuczki was made from fresh milk, but seems to me that ones I ate were prepared on soured milk or kefir, so I used kefir myself. You can buy kefir in polish shops or try replace it f.e. with natural joghurt.

You need:1.5 cup flour1 cup kefir
30-40 dag sauerkraut (weight without liquid)1 eggPinch of baking powderSalt, pepperOil to fry

Preparation:Mix egg with kefir, flour, baking powder, salt and pepper to smooth. Set aside for 10 minutes. Meantime, carefully strain the sauerkraut on the sieve and cut into smaller pieces. Mix sauerkraut with the dough using a fork. Heat up the oil ( enough to deep frying) on a pan, add portions of the dough using a spoon and fry on medium heat for a few minutes on either side (to golden brown). Transfer the fried pancakes to a paper towel-lined plate. Serve immediately, pancakes tastes great with sour cream.
