Yeast strudel with pumpkin feeling

Pumpkin season is in full swing. It`s a time to prepare my favourite pumpkin pie – rustical yeast strudel.

You need:

For the dough:
1.5 glasses of wheat flour (Glass = 250 ml)
1/3 glass warm milk
70 g butter
3 egg  yolks
25 dag fresh yeast
3 tablespoons of sugar
2 tablespoons of vanilla sugar
Pinch of salt

For stuffing:
1 small pumpkin (mine weighed in whole 1.7 kg) 
3/4 glass sugar
1.5 tablespoons of vanilla sugar
1 teaspoon of lemon juice
2 tablespoons of water

You can also use a large jar of pumpkin preserves (without  any tickeners)

First prepare stuffing ( the day before preparing a pie).
Start by trimming the stem off. Then remove the seeds and stringy stuff from the middle of the pumpkin, peel the pumpkin using a nife ang cut pulp into cubes.  Place it in a large bottomed pot, add sugar and water, cook until soft, stirring occasionally. Then cool the pumpkin slightly and blend it into smooth mass. Add vanilla sugar and lemon juice and fry the perserves for another 30 minutes on low heat, stirring constantly.

To starting preparing the dough heat the butter in a saucepan and sed aside to cool. Pour some warm milk into another pot or bowl, add yeast, a tablespoon of flour and a tablespoon of sugar. Leave for about  5-10 minutes to get the yeast worked. Then add cooled butter and other ingredients and make smooth cake. You can add more milk or flour if it`s necessary. Cover the cake and leave to rise for about an hour in a warm place.

Preheat the oven to 190 degrees of Celsjus (top+ down heating), roll out the dough into a sheet 3 mm. You can gently sprinkle the top with potato starch to absorb moisture. Smear the dough with the perserves, leaving about 1-2 cm of free edges, roll the dough along the long side, and  roll up the ends underneath. Gently roll the strudel on large baking pan lined with baking paper, put into the oven and bake to golden (about 30 minutes or shorter, You must be careful and observe it).
Set  the strudel aside to cool, and then smear it with sugar glaze (made from powdered sugar and water).
