Old Lviv style casserole



Recipe found inside a book  „Kuchnia Kresowa” of A. Fiedoruk. In this book You can find traditional recipes coming from Kresy Wschodnie – a historical part of Poland during the interwar period. This casserole tastes really rustical and homely.

You need:
10 medium potatoes
5 sheets of  country style herring (traditional with onion "śledzie po wiejsku z cebulką")
1 large onion
5 tablespoons of butter 4 tablespoons breadcrumbs

Preparation:
Boil the potatoes in salted water, and when they  are  slightly cool, cut them into thick slices. Cut the herring into thick cubes and onion into small ones. Fry onion with butter untill golden. Grease the baking pan with a butter and make the layers putting alternately: potatoes, herring and portions of butter with onion (last layer have to be potatoes), Sprinkle the breadcrumbs on the top of the last layer and pour it with the last part of butter with onion. Put it into the oven preheated to 180 degrees of Celsjus and bake about 15 minutes until the breadcrumbs are goldenbrown. Serve it when is still hot, it tastes delicious with polish style pickled cucumber (ogórek kiszony).
